Similar to how a chocolate malt gives a porter or stout a mocha flavor in brewing, this Highland scotch is full of cocoa and espresso flavors that only get stronger with age. It has a seriousness that Tardie respects because it is made from the distillery’s oldest whisky, a 35- to 40-year-old scotch that was aged in American white oak. He claims that as you sip it and the alcohol burns off, a powerful flavor of dark chocolate and coffee grounds is there.

I’m certain that the distiller prefers wine over whisky because Glenmorangie’s whiskies go so well with food, Tardie says.

This light, flowery scotch, made with estate-grown malted barley and aged 15 years in ex- bourbon American oak barrels, goes well with a range of summertime dishes. Try pairing the whisky with marinated grilled chicken, bbq spare ribs, mint-laced salads, or fresh berries for dessert after opening it with some water. A pleasant herbaceousness, vanilla, toasted almonds, and a trace of citrus follow the honey-blossom aroma.

Want to start working at a new distillery right away? Torabhaig launched in 2017 and is just the second licensed facility on the Isle of Skye. Its initial release, a single malt blend made from 100 hand-selected barrels, is young yet delicious. The clean island spring water used to create it and the Kentucky bourbon barrels used to age it provide a crisp sweetness that balances the strong peat flavor. A whisky designed for savoring or incorporating into beverages is created when the honeyed vanilla char of the wood combines with isle seagrass and iodine.

Tardie advises against overcomplicating cocktails. Stick with something more affordable, he advises. However, it doesn’t follow that you can’t aim for quality

This Speyside scotch is light and easy with a relatively low alcohol content because it was aged in ex-bourbon barrels, making it “not a sherry bomb” like some are. “It’s not too overpowering in any one direction,” says Tardie, “but it’s diverse enough to throw a cube in, sip neat, or put into a rusty nail.” Floral on the nose and bittersweet on the taste.

Conclusion
